Salty carrot cake. Original and easy recipe to make at home

Carrots, in addition to being one of the cheapest foods on the market, is one of the most nutritious in our diet. Its properties are beneficial for our digestive system, eyesight, skin, fertility, and even for the formation of children's bones.

Due to all these qualities, we have decided to develop a simple salty tart with carrots which is delicious. From our site we invite you to try this healthy, original and easy recipe that will keep your children healthy and strong.

  • Parsley or coriander.
  • 10 carrots.
  • Oil.
  • Salt and pepper.
  • An orange.
  • 2 eggs
  • 200 ml of cream for cooking.
  • A package of shortcrust dough.

1- Wash, dry and chop the parsley. Reservation.

2- Peel and wash the carrots. Then cut them into sticks. Heat a frying pan with 3 tablespoons of oil and start sautéing the carrots.

3- Add half the parsley, season with salt and pepper to taste; squeeze the orange and add the juice to the pan. Keep it on low heat for 15 - 30 minutes (until the carrots are soft). Roll out the shortcrust pastry on the pan and pierce it several times with a fork. Reservation.

4- Preheat the oven to 200º with heat up and down. Meanwhile, beat the eggs, cream and the rest of the parsley in a bowl. Salt and pepper to taste again.

5- Pour 3⁄4 parts of the sautéed carrots over the base of the mold; Top with egg mixture and use remaining carrots for garnish. Bake 35 minutes.

6- And voila! You already have a delicious cake prepared to include in your lunch, dinner or even for a snack.
